use paper cups. In a bowl, whisk 1 tsp baking powder, salt, and oat flour. In another bowl, blend the ½ tsp baking powder and applesauce. To this add, vanilla extract, sugar, oil, flaxseed meal, and milk. Stir until well blended. Add the strawberries to the dry ingredients and blend well. Slowly add the dry ingredients to the wet ingredients and do not over mix. Add the chocolate chunks, stir. Spoon the batter into the muffin pans. Bake 18 to 20 minutes. Makes 10 to 12 muffins.
